I’ve been eager to pose a new challenge for August but I wasn’t sure what direction to take until I saw this article (and this one). The articles state that the USDA announced it’s support of the Meatless Monday campaign only to later retract it via Twitter.
Well, this August, our household will support Meatless Monday and I encourage you to give it a try too! It might sound intimidating but 4 Mondays without meat can’t be too hard, right?
Meatless Monday is something we tried last year and while vegetarian eating is easy for me, it is incredibly difficult for the carnivore that also resides in this house (and I’m not talking about the dog). In fact, it’s quite possible that his heart stopped for a minute when I mentioned eating meatless for an.entire.day. ohmygosh.
But, I was able to drag said carnivore into a vegan restaurant and shocker – he liked it! There is hope for the rest of us!
Here are some ways to stay meatless this Monday:
Order a veggie sandwich, soup or a Portobello burger when you go out for a bite at lunch time.
Get out of your comfort zone with a lentil based curry for dinner or make some protein rich quinoa and black bean burgers. Browse the Meatless Monday website for recipes and tune in here for recipes throughout the month to help get you through the challenge.
Even if you only participate for one day this month, you can be proud for stepping out of your comfort zone and trying something new!
