Pineapple has stolen my heart.
In the past 2 months we turned it into salsa, put it on skewers, grilled it, topped it with coconut and combined it with steak.
Grilling pineapple brings out the sweetness and it is great when paired with something salty (like ham or tamari) or tangy like lime juice. Ginger is one of my favorite spices and it is a great compliment to the pineapple. It packs a flavorful punch so use it sparingly! It’s anti-inflammatory properties are wonderful and it aids in digestion. I had this ginger powder on hand but you can substitute for grated, fresh ginger root in the recipe.
Pineapple Ginger Dressing
- 3/4 c. pineapple, pureed
- 1/4 tsp. ginger powder (or freshly grated ginger if you have it on hand)
- 1 tsp. Tamari (gluten-free soy sauce)
- Juice from 1/2 lime
- 2 garlic cloves
- Pinch of salt to taste
Combine all ingredients into a food processor or blender and blend until smooth.
Grilled Pineapple, Steak & Avocado Salad
- 4 c. lettuce (arugula, spinach)
- 4 slices of pineapple
- 1/2 Avocado
- 12 oz lean sirloin steak
- Salt & Pepper to taste
Season the steak with salt and pepper and let rest at room temperature while you prepare the pineapple. Preheat a grill pan to medium high. Add pineapple slices and cook until charred, about 3 minutes per side. Remove the pineapple from the grill pan and place the steak on the pan. Quickly sear one side then the other and allow to cook until it reaches your desired level of doneness. Divide the lettuce, avocado, pineapple and steak between two bowls , top with dressing and serve immediately.
