Peach, Pecan & Chicken Salad with Goat Cheese

It’s like the state of Georgia on a plate.

You know those days when you come home late, the refrigerator is empty and you stand in the kitchen wishing Mary Poppins would magically appear with dinner?

Well, this might be the next best thing.  It’s fast, easy, delicious, and a little bit unexpected.

Next time you are in a bind, pick up a rotisserie chicken (or better yet, if you have time, roast your own), use the lettuce you have on hand, grab a couple of peaches, maybe some goat cheese and call it done.

You might be a little wary of goat cheese but the sweetness in the peaches really balances out the flavor, you will be surprised at the way the flavors compliment each other.  If you absolutely despise goat cheese, you can try gorgonzola or omit the cheese entirely.

Peach, Pecan & Chicken Salad with Goat Cheese

Serves 2

1 large chicken breast, cut into strips

1 peach, cut into bite size pieces

2 c. of lettuce (for this salad I recommend using either spinach, romaine, kale, green leaf or Boston)

a few crumbles of goat cheese according to your taste

chopped pecans (optional)

A splash of white balsamic vinegar as dressing; a poppyseed dressing would also go well but I used what I had on hand.
