Refreshing Tequila-Lime Honeydew Salsa

There’s something about Friday that makes me want to cheat.

On my diet that is…

It is so hard to convince myself to hold out for one more day; so, I trick my brain into thinking that I’m allowing myself a cheat by doing things like hiding tequila in salsa.

Brilliant.

Fortunately, you don’t have to hold out for a weekend to enjoy this treat.  This is the perfect recipe to enjoy on any summer evening because the honeydew melon is so refreshing.  This salsa is easy, fast and versatile – you can serve it with white fish, chicken, seared scallops, shrimp, grilled steak, or you can get really creative and serve it with traditional tortilla chips.  Just throw the ingredients together and chill for an hour for best results.

It’s Memorial Day Weekend – go ahead and enjoy it with a real margarita!

Tequila-Lime Honeydew Salsa

Yield: 4 cups
Active time: 15 mins
Total time: 1 hour & 15 mins.

Ingredients

  • 1 1/2 c. chopped honeydew melon
  • 1 c. chopped red onion
  • 2 avocados
  • 2T chopped cilantro
  • Zest of 1/2 lime
  • Juice from 1/2 lime
  • 1/2 jalapeño, seeded and finely chopped
  • 2 tsp. tequila
  • Sea salt to taste

Directions
Combine the melon, cilantro, lime zest & juice, red onion, avocados, jalapeño & tequila, stir well and refrigerate for an hour to let the flavors mix.

Note: This recipe is naturally gluten-free; omit the tequila to make it Paleo friendly
