Meal Plan Monday

I am in the mood for simplicity after a weekend of indulgence coupled with last week’s flavorful, Asian-inspired menu.  In my kitchen, simple does not mean boring so I am livening up this week’s dishes with fresh herbs, citrus and coconut in lieu of sauces and spice.

Monday: Grilled Chicken topped with tomato, basil and balsamic served with a spinach salad

Tuesday: Thai Coconut Shrimp from Clean Eating Magazine, we will likely omit the brown rice pasta and opt for a vegetable side dish instead

Wednesday: Sole with red peppers, fennel, capers & lemon served with shaved zucchini seasoned with lemon and garlic

Thursday: Paleo Coconut chicken with a carrot apple and orange salad

Friday: Agave Lime Salmon with grilled veggies

We have a graduation to celebrate this weekend so rather than challenging ourselves to make a new (and time-consuming) meal we are treating ourselves to a date-night at Cafe Roka in the oh-so-cute town of Bisbee, AZ.  We will cap off the weekend with a fabulous brunch with friends at Loews Ventana Canyon and of course, a Superbowl party.  Another weekend full of indulgence, I thought the holidays were over?
